Vanilla Chocolate Chip Cookies

This recipe takes the humble chocolate chip cookie to the next level with the addition of a secret ingredient – our very own Vanilla Coconut Oil.

Ingredients
1-1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup Governor's Estate Vanilla Coconut Oil
1/2 cup dark brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips

Instructions
In a small bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
In a medium bowl, using an electric mixer, cream together coconut oil and sugars until light and fluffy. Add egg and vanilla and beat until well combined.

Gradually add dry ingredients to wet ingredients, stirring until well blended. Stir in chocolate chips. Refrigerate dough for 2 hours to overnight.

Preheat oven to 180°C. Line cookie sheets with parchment paper. Scoop rounded tablespoonfuls of dough onto prepared cookie sheets, 3 cm apart. Bake for 7 to 9 minutes, or until edges are slightly brown. Transfer to a wire rack to cool completely.
